I have a confession to make, I have a slight obsession this time of year for pumpkin. And by slight, it’s possible I mean overwhelmingly delightfully gigantic. I love pumpkin and all of the relevant spices that accompany it.
Lately I’ve tried my hand at this delectable recipe courtesy of Jessica of The Novice Chef Blog. Appropriately (and I’m sure lovingly) called “Pumpkin Dream Cake” and what a dream it is, this cake is simple flavors of fall. Her photography made my mouth water and was immediately pinned to my “Food Photography” board. (In case you haven’t visited yet – or in a while – check out my other obsession here.) But her post is what really stood out to me, I love a good story (you got it, I was the kid that could make a person hoarse asking for “just one more”) and this post is a beautiful one.
The first opportunity I had to make a couple dozen cupcakes for a picnic – I might have danced a little jig knowing I was going to get to try this recipe.
I was a little worried about translating a gorgeous three-tiered cake into tiny little cupcakes but they turned out perfectly! The only addition I made was to add a pumpkin pie inspired mix of spicy wonderfulness to the dry mix.
